When we tested the recipe for this Instant Pot Balsamic Pork Roast, we couldn’t stop talking about how delicious it was. This would be amazing for a low-carb dinner; make Slow Cooker Balsamic Pork Roast if you prefer using the slow cooker!

I hope you can tell from the photos that this Instant Pot Balsamic Pork Roast was absolutely amazing because Kara and I swooned over this when we tested the recipe! For a long time now I’ve had a note to myself to try an Instant Pot version of the popular Slow Cooker Balsamic Pork Roast on the blog, and we were so happy with how the Instant Pot version turned out
And this was so quick and easy to make in the Instant Pot! We used the same Rosemary and Garlic Herb Rub that I liked so much for the slow cooker version, but if you don’t want to make that mixture, just substitute any seasonings that are good with pork. I used pork loin roast from Costco, which was inexpensive as well as being delicious, and this made eight servings for a main dish that’s perfect for a special meal!
What Size Instant Pot Did I Use?

How to Make Instant Pot Balsamic Pork Roast:

- Make the Rosemary and Garlic Herb Rub, if using.
- Trim unwanted fat from the pork loin roast, then rub the roast on all sides with the herb rub.
- Combine beef stock and balsamic vinegar to make the cooking liquid.
- Turn Instant Pot to SAUTE, MEDIUM HEAT, and heat the oil.
- Then add the pork roast and brown well on all sides.
- Remove roast and use a plastic turner to scrape off any browned bits on the bottom of the pot.
- Then add the roast back into the Instant Pot and pour the cooking liquid over.
- Set Instant Pot to MANUAL, HIGH HEAT, 15 MINUTES.
- When cooking time is up, use NATURAL RELEASE to release the pressure.
- Remove the roast to a cutting board and tent with foil to keep warm.
- Set Instant Pot to SAUTE, HIGH HEAT, and simmer the cooking liquid until it’s reduced as much as you prefer.
- After sauce has reduced, slice the roast into pieces about 1/2 inch thick.
- Serve hot with sauce to drizzle over the meat at the table.

- Combine 3/4 cup beef stock and 1/4 cup balsamic vinegar to make the cooking liquid.
- Turn Instant Pot to SAUTE, MEDIUM HEAT, and heat the oil.
- Then add the pork roast and brown well on all sides. Don't rush, we browned it about 3 minutes per side.
- Remove roast and use a plastic turner to scrape off any browned bits on the bottom of the pot.
- Then add the roast back into the Instant Pot and pour the cooking liquid over.
- Set Instant Pot to MANUAL, HIGH HEAT, 15 MINUTES.
- When cooking time is up, use NATURAL RELEASE to release the pressure.
- Remove the roast to a cutting board and tent with foil to keep warm.
- Set Instant Pot to SAUTE, HIGH HEAT, and simmer the cooking liquid until it's reduced as much as you prefer. (We simmered it about 10 minutes.)
- After roast rests while you reduce the sauce or at least a few minutes, slice into pieces about 1/2 inch thick.
- Serve hot with sauce to drizzle over the meat at the table.
Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
This Instant Pot Balsamic Pork Roast is a great dish for low-carb diet plans, and for any phase of the original South Beach Diet. Balsamic vinegar does have some carbs, but you’re actually eating a very small amount of it.
